Burger Cravings

Big huge juicy beef burgers are my thing. I'm the girl that ordered a huge burger at my bachelorette party two days before the wedding. One that orders a burger when all the other girls order salads. The girl that once cried when they brought me a veggie burger when it was supposed to be a turkey burger (it had been a REALLY long program and the turkey burger was the one redeeming quality of the hotel).

I've found a veggie burger that I reallllly like. Not like as a back up burger -- as the burger I've starting craving on a semi-regular basis. I know, I KNOW. Dangerous words from a carnivore like me.

It's worth sharing. I know.  A blog post on a veggie burger from ME. Alas. I digress.

It all started when Joel and I had our friends over for a grill out. They are vegetarians, so we wanted to honor them with the food we had (we were still in the -- do they eat fish? part of the friendship -- answer, yes they do). I went on a search for a great black bean burger. Of course I had to make it myself. I started reading -- these were the links that tickled my fancy the most. Being Anna, I couldn't just follow a recipe - I combined a few.

Serious Eats - Best Black Bean Burger
Oh She Glows - Our Perfect Veggie Burger
Skinny Taste - Spicy Black Bean Burgers with Chipotle

Disclaimer -  this recipe has quite a bit of prep and ingredients, but I definitely think it's worth it. Spices and mix ins are totally flexible if you're not a fan of one or two - these are just what I like.
****

THE BOGGS BURGER (SPICY BLACK BEAN VEGGIE BURGERS)

Ingredients:
  • 1 cup oats, pulsed in a good blender or food processor (doesn't have to be ground down to flour, but chopped work better than whole oats)
  • 1.5 cups bread crumbs (I use whatever I have on hand - usually comes out to about 3 slices)
  • 1 cup grated carrots (I use the largest holes on my grater)
  • 1 can black beans, rinsed, drained and mashed (I mashed with my potato masher for a chunkier mash or you can use a fork for more pasty mash -- up to you)
  • 1/2 cup almonds, chopped KIND of finely. but still enough to be crunchy in the burger patty! (I've also used cashews successfully)
  • 1 chopped bell pepper (I used a mix of red/yellow that I had leftover, doesn't matter what kind!)
  • 1/2 cup onion, diced
  • 2-4 chipotle peppers in adobo sauce, chopped finely (I used 4 of them and the burgers are not overwhelmingly hot)
  • 1 tsp minced garlic
  • 1 egg
  • 1 tbsp. Extra Virgin Olive Oil
  • 1 tsp soy sauce
  • 1 tsp chili powder
  • 1 tbsp cumin
  • 1 tbsp coriander
  • 1 tbsp oregano
  • Salt and black pepper, to taste (I used about 1/2 tsp onion salt and 1 tsp black pepper)
Accompaniments:
  • Chipotle mayo (Use a 3 to 1 ration of mayo to adobo sauce, leftover from can of chipotle in adobo peppers used in the recipe)
  • Sliced avocado
  • Additional items I like: cheese (favorites are pepperjack or provolone), Sliced tomatoes, lettuce, pickles
  • hamburger buns
Prep ingredients. Mash up the black beans, pulse the bread crumbs and oats, chop the almonds / peppers / onions, shred the carrots

In a large bowl, combine bread crumbs, oats, carrots, almonds, bell pepper, chipotle pepper, onion, garlic and black beans. Mix together thoroughly with a spoon or your hands.

In a small bowl, combine dry spices and mix together. Add spices to the big bowl along with soy sauce and olive oil. Stir together. Stop. TASTE THE MIX - do you like how it tastes? No? Add more spice / soy sauce / garlic to taste. I loved that one of the recipes I read said that if you don't like the mix- you won't like the burger! Once you like how it tastes, add the egg and mix thoroughly with your hands or a spoon. The mix will be pretty gooey (similar to how a beef burger mix feels).

Grab a big cookie sheet and put wax paper down to cover the whole cookie sheet. Form the mix into patties and evenly space patties on the wax paper. This recipe made 8 generous patties for me. Once you are happy with how the patties look, put the entire cookie sheet into the freezer (if your freezer is smaller than your cookie sheet, you might need to use 2 smaller pans like cake pans or pie tins for this part). Freeze for at least one hour, or until patties are firm. Once frozen, cut squares of wax paper around each burger, then place the individual burgers together in a large ziplock back. Store in the freezer.**

Once ready to cook - peel off the wax paper.
Grill - brush the top of the patty with oil and place frozen patty directly on a medium heat grill - oil side down, about 4-6 minutes. Brush the top of the burger with oil, then flip and cook for an additional 4-6 minutes. I'd suggest adding a slice of cheese in the last 2 or so minutes of cooking!
Skillet - place frozen patty in a highly sprayed or oiled skillet at medium heat, cook about 4-5 minutes per side. Sometimes I have to get a lid from another pot to put over the top of the burger (it gets a little smoky). I'd suggest adding a slice of cheese in the last 2 or so minutes of cooking!
Oven- I'm sure you can bake these in the oven. The other recipes said a 375 degree oven

**If you are wanting to make these right away and NOT freeze them, I'd suggest putting in an additional 1/4 cup pulsed oats to hold them together a little better.

****

ENJOY. I really hope you do. These have made me into a veggie burger fan. My new summer favorite thing is to keep these in the freezer for an easy and super yummy lunch. 10 or 12 minutes later, and I have an awesome burger to eat. Just as good without a bun if you're avoiding gluten - pile toppings on and knife & fork the heck out of it! I would post a picture of the veggie burger I ate for lunch-- but I ate it too quickly. oops.

The Great Sin

I had a friend tell me that he immediately thought of me when he saw this clip. He thought I should go watch it.

Ouch.
I watch the video...I score pretty high on the pride test. As much as my spirit flinched when I was told this test brought me to mind, I knew I would fail any test on pride.
I don't want it to be an issue, but I know this is a huge struggle for me.
CS Lewis has some great words about The Great Sin.

So many aspects of my personality and mannerisms are competitive, full of debate, and intense. I know that I'm prideful. I get mad at myself when I start getting super competitive, then friends/family can tell I'm worked up and assume I'm even more into winning than normal (that's a big amount). It's a slippery slope.

My biggest fear: embarrassment
Games I hate: charades, acting/singing in front of others unless it's worship music
My safety net: jokes or making fun of myself so no one else can first
At the core, my fears and my quirks are rooted in not wanting to look dumb. I want to appear put together. I don't want to feel stupid. If I truly believed and lived in the belief that Christ was all, the opinion of those around me wouldn't hold such merit in my everyday life.

As I study the humility of Christ, I see how far from that I am. I see that my pride is ugly. The core of me is utter depravity. I need Jesus more than ever. Oh that I would set my pride aside, humble myself, and ask God to do a mighty change in me. That I would recognize that my pride shames the Gospel. That the glory of God and wishing to honor Him with everything would be my motivation to surrender my great sin to the Lord.
To be bold FOR JESUS.
To win PEOPLE TO CHRIST.
To seek attention FOR THE CROSS OF CHRIST.

Call me out. Help me wage war against myself.

Waiting

My birthday came and went. It was hard this year -- not because of turning 25, but simply because it seemed unimportant. It was just another day of class, another day at home, another day with friends. There were amazing facebook wishes and high fives from a few random people in class that heard it was my birthday--but nothing that seemed special.

I think the blah of this year was partly because last year was so epic. Surrounded by friends in Austin - old missional community, new missional community, best friend flew in from Minnesota, work friends, roommate, choir friends - they brought wine and cooking gifts. Not because I told them to (well, I did tell them to bring wine), but because they KNEW me and my quirks. We ate and drank and mingled. It was easy. Flowers at work, dinner at my favorite winery with my besties. I miss that life.
Steph flew in.

Through the dull pain of change, the Lord is teaching me to wait. To rest on him. To see His GLORY and BEAUTY in the hope of spring. The gentle and sometimes violent rains that usher in the flowers. The deep, dark soil churned up by farmers ready for seed to be planted in. Then we WAIT. Eager anticipation of harvest.
James 5:7-11 Be patient, therefore, brothers, until the coming of the Lord. See how the farmer waits for the precious fruit of the earth, being patient about it, until it receives the early and the late rains. You also, be patient. Establish your hearts, for the coming of the Lord is at hand. Do not grumble against one another, brothers, so that you may not be judged; behold, the Judge is standing at the door. As an example of suffering and patience, brothers, take the prophets who spoke in the name of the Lord. Behold, we consider those blessed who remained steadfast. You have heard of the steadfastness of Job, and you have seen the purpose of the Lord, how the Lord is compassionate and merciful.
Learning to rest and hope and trust is a process. Clinging to the promise that the Lord is compassionate and merciful. Dancing in the rain. Taking joy in this season.

I'm so glad to have friends here in Ames that can love me through that process. Friends here to talk through Scripture with. To laugh at jokes with. To sing at concerts with. To banter during Catan with. To delight in the waiting with me. So thank you - to the Texas friends that I miss so dearly and to the Ames friends that I'm enjoying the NOW with.

Birthdays and Deathdays

A year ago today, a friend of mine died from liver cancer. He was 23.
My birthday is coming up. The big 2-5--A quarter of a century!

As my heart ached today remembering Peder and what today represented, I started smiling. On earth we count birthdays. The trend is to agonize over the next year. Western cultures war against nature and *gasp* getting OLD. Each year we mark down one more year finished. One less to live. One closer to death. We're terrified of death.

Peder just had his 1 year birthday in heaven. The neat thing...he's not counting down anymore. Heaven is forever. ETERNITY. One down, eternity to go. NO BIG DEAL. How exciting is that?! Forever with Jesus. In his presence. Adoring Him. At HOME with HIM. My heart beats faster just thinking about it.

Hip Hop Conviction

I got to spend the last 3 days of my Spring Break in Austin, Texas for South by Southwest. I had been serving at a camp in Tyler, Texas for the first part of the week then got an invite to tag along to Austin for a weekend of music and fun with a friend that was also serving at the camp. He's way more into music (at least the kind that plays at SXSW) than I am, so he made the schedule of shows he thought would be awesome and I was all in.

I'm a white girl. I like classical music, baking, high heels, ruffles, romance novels, and craft projects. I drive a chevy malibu and love opera.

Scene: Holy Hip Hop Concert.
It's at a church, there are seats, then a stage with two DJs spinning and a whole bunch of people milling around waiting for the show to start. We take our seats. I'm feeling moderately self conscious, but okay. We're not too close to the front and claimed seats. I can blend in here. I still feel like people are staring at me. The emcees come out and welcome everyone and set two rules: no sitting, and they tell people to come up front by the stage (as the smoke machines start going off and rappers get ready to come out).

Dustin says, YES! LET'S GO!!
My heart SINKS. I'm like. uhhh. I'm so uncomfortable already. I'm going to stick out. I also don't want to sit by myself. I go up there. First rapper comes out. All I can think about is how awkward I feel. How people are judging how I stand and how I bop to the music and how I look. Then I start listening to the lyrics. They are about Jesus. They are about who we are in Christ. They are about the idols we hold above Him--ourselves.

Enter: Conviction.

I'm so wrapped up in myself that I'm missing the point in a HUGE way. My audience isn't the people around me. Their opinion of me isn't important. They aren't judging me. THEY are enjoying the music. THEY are having fun. They don't care nearly as much about me as I do. My insecurities are taking away from the GLORY due to Jesus Christ. As my heart is hurting over my own sin and ugly focus on myself, the lyrics these rappers are singing start delighting my heart. "Ain't no party like the holy ghost party cause the holy ghost party don't stop". I start singing along. I'm swaying. I'm loving it. I make friends with some girls next to me. I'm dancing. I'M HAVING A BLAST!

My own pride is my worst enemy. Pride was keeping me from encountering Jesus at that show. Pride was assuming that MY APPEARANCE was more worthy of the attention of people around me than the saving grace of Jesus Christ presented through rap lyrics.

I'm thankful for a God that humbles me and uses my filth to drop me to my knees and points me to Him.

An update of sorts

I'm alive.
Broken, but hopeful.
  • Learning more daily about this large, bustling, and windy city.
  • Loving my new church Missio Dei and the community I'm growing in through it.
  • Struggling to thrive at work.
  • Adoring fall and crunchy leaves.
  • Baking all things pumpkin (Try this pumpkin bread -Add a tsp of vanilla and a tad more nutmeg)
  • Enjoying being a regular at the farmer's market down the street -especially the flower vendor!
  • Headed back for my second football game of the season at Purdue in a few weekends with my sister and her husband. Check out the seats/tickets Joel hooked us up for the last time I went back for a game!
Not bad, eh?

Then even more recently, loved going up to Minneapolis to see one of my dearest friends get married. I got to be a part of their big day too. Their wedding was such an encouragement - It definitely pointed to Jesus and the hope that we can have in the covenant relationship with Christ. A few snapshots that the groom's cousin took with his iPhone during the pictures session. I kind of love them:
God is who He says He is. I'm so thankful for that.
Yet again I find myself in a season where I don't know what's around the corner. HE DOES.
I don't know why I have stirrings in the deepest parts of my soul for something different. HE DOES.
He is sovereign. He makes no mistakes. He loves me. He pursues me. He chose me. He leads me.

I read a post from a friend's blog that resonated with me (enough to awake the sleeping blogger). You should really read the whole thing, but I thought I'd share the end:
When our lives are stripped of their good circumstances, we get to see God as He really is. When we’re bare and feel empty and alone and hurt, we have nowhere else to go but to Him. And He meets us when we go to Him. We get to see that He not only exists, but that He’ll listen to our cries and, somehow, provide comfort. This is when God increasingly becomes a friend. It’s mysterious and it’s tragic and it’s good. Because HE is good.

Hips, say thank you to David Lebovitz

Want wow factor for your next girls night or family gathering?? Dying to put on a few extra pounds to "fill out" that perfect dress? Want your friends to drool and clap like newborns?? MAKE THIS CAKE! It's called Banana Cake with Mocha Frosting. Yes.

Holy Cow. You had me at banana chocolate--then add the mocha ganache frosting and candied salted peanuts?? Life changing. I initially saw the recipe in David Lebovitz's new cookbook "Ready for Dessert"- I took a picture of the title of the cookbook and the name of the recipe for this specific cake because the picture and description were mouth watering.

Many dreams of banana chocolate gooey deliciousness later, my work lovelies suggested a last hurrah baking, wine and cheese extravaganza at my friend Jen's house the weekend before I moved.

The four of us (no picture was taken the night of) kept getting more and more excited as the cake came together. The smells from the kitchen did not disappoint. Meet the ladies:
L to R: Jen, me, Emma, and Dawn

The recipe is long and the picture looks complicated--it's NOT a difficult recipe! The banana cake is similar to banana bread and the frosting is just melted chocolate and butter! Looks professional. Tastes AMAZING. Lots of layers of flavor. Dude. Click on this link to the LEGAL copy of the recipe and get baking!! Your mouth will thank you. You can work out later to make up for it.

Photos of the cake taken by the lovely Dawn Mitchell!

Now THAT'S what I call a Friday Night!

To my Austinites and to those reading from far far away, let me tell you: last night the foodies were OUT and we celebrated rightly.

Whether or you were aware, yesterday was National Doughnut Day. My co-workers and I formulated a plan to hit the town for dinner and doughnuts to properly acknowledge the day. We went to Gibson Bar and Gourdough's.

Both places serve their food out of trailers (VERY common in Austin. There are entire trailer parks that are just restaurants--GOOD restaurants at that!). Both venues had amazing food that makes you go SERIOUSLY? THAT? That's what I'm going to eat?

Yes, yes I did eat that (we shared, don't judge):
1. The flying pig: a doughnut w/ bacon on it and maple syrup glaze
2. The most amazing grilled cheese ever: also with a fried egg on texas toast
3. The buenos dias: A hot dog wrapped in bacon with cheese and a fried egg
4. The son of a peach: a doughnut w/ peach filling, drizzled w/cream cheese icing
5. The miss shortcake: a cream cheese filled doughnut w/ sliced strawberries on top

Gourdough's is a must for people visiting Austin: eclectic, ridiculous, fun, food served out of an airstream trailer, BYOB, and great tasting treats!

Parting is such sweet sorrow

Preparing to leave Austin is proving to be even more challenging that I was expecting. I have so many deep and amazing relationships here. I ADORE this city. I thrive in community with people that share big dreams with me.

My first instinct is to pull away from everyone here. To tuck away in my apartment, finish my few weeks at work and just leave.
Goodbyes are hard. Having to actually face the reality of leaving stinks. Pulling away makes the pain seem less searing. Retreating from community numbs the hurt. These people have been such a huge part of my life. I can't do that to them. I love them. I love the roles they have played in my time here. I want to SAVOR the last weeks here. I want to laugh with them and cry with them and pray with them. I still want to dream with them.

So onward I go. Into the coming weeks of tears and laughter. Lots of see you laters and bittersweet goodbyes. My sweet friends, know that this time isn't easy for me either.
